The fish that we are smoking are growing beautifully in the Sound of Harris. This area is full of reefs and shoals but also offers some excellent salmon growing conditions. As the fish are about 36 months old now, the fillets are deep and flavoursome. The Flaky is especially good as there is rich deep flakes of salmon inside the smoky outer crust.
