\u00c0 l’avance<\/strong> \u2013 \u00a0Partie 1<\/p>\n

M\u00e9langer les betteraves rouges, les zestes d’orange et de citron, l’aneth et le gen\u00e9vrier dans un robot de cuisine jusqu’\u00e0 l’obtention d’une pur\u00e9e grossi\u00e8re. Ajouter ensuite la moiti\u00e9 du sel gemme et du sucre demerara et m\u00e9langer.<\/p>\n

Verser le gin et bien remuer le m\u00e9lange.<\/p>\n

Disposer une feuille de film alimentaire, y \u00e9taler 1\/3 du m\u00e9lange au centre et placer les filets de saumon sur le dessus.<\/p>\n

Ajouter le reste du m\u00e9lange sur le dessus des filets et s’assurer que tous les c\u00f4t\u00e9s sont enrob\u00e9s.<\/p>\n

Bien les envelopper dans du film alimentaire et les placer au r\u00e9frig\u00e9rateur sur une assiette.<\/p>\n

Apres 48 heures, les sortir du r\u00e9frig\u00e9rateur, gratter le m\u00e9lange durci et laisser s\u00e9cher.<\/p>\n

Couper dans l’\u00e9paisseur d\u00e9sir\u00e9e et rouler en roses pr\u00eates \u00e0 servir.<\/p>\n

\u00c0 l’avance<\/strong> \u2013 Partie 2<\/p>\n

Hacher grossi\u00e8rement l’aneth puis m\u00e9langer avec le reste de sel gemme et le sucre demerara.<\/p>\n

\u00c9talez une feuille de film alimentaire et \u00e9talez 1\/3 du m\u00e9lange au centre et placez les filets de saumon sur le dessus.<\/p>\n

Ajouter le reste du m\u00e9lange sur le dessus des filets et s’assurer que tous les c\u00f4t\u00e9s sont enrob\u00e9s.<\/p>\n

Enveloppez-les bien dans du film alimentaire et placez-les au r\u00e9frig\u00e9rateur (sur une assiette juste pour \u00eatre s\u00fbr).<\/p>\n

Apr\u00e8s 48 heures, sortez du r\u00e9frig\u00e9rateur et grattez le m\u00e9lange de durcissement et s\u00e9chez.<\/p>\n

Couper dans l’\u00e9paisseur d\u00e9sir\u00e9e et rouler en roses pr\u00eates \u00e0 servir.<\/p>\n

Jour J<\/strong> \u2013 Partie 3<\/p>\n

Trancher finement le concombre, le placer dans un bol, puis saupoudrer de sel et m\u00e9langer.<\/p>\n

Laisser reposer 10 minutes, le rincer et le placer sur un torchon.<\/p>\n

M\u00e9langer le sucre blanc et le vinaigre ensemble puis dans un bol s\u00e9par\u00e9, ajouter le sirop et le concombre ensemble et le placer au r\u00e9frig\u00e9rateur pendant 2-3 heures.<\/p>\n

Retirez lorsque vous \u00eates pr\u00eat et pr\u00e9sentez comme vous le souhaitez.<\/p>\n

Terminer le plat<\/strong><\/p>\n

Saumon fum\u00e9 de bonne qualit\u00e9 \u2013 d\u00e9chirer et rouler en \u00ab\u00a0roses\u00a0\u00bb.<\/p>\n

Pain de seigle – m\u00e9langer dans un robot culinaire juste avant de dresser<\/p>\n

Feuilles m\u00e9lang\u00e9es \u2013 lav\u00e9es et s\u00e9ch\u00e9es<\/p>\n

Radis \u2013 Tranch\u00e9 finement<\/p>\n
